I ship this one to restaurants from New York to Charleston, to Seattle, to San Francisco. It is not from here but you would find a chip maker in Hawaii and I’m one of three growers in California. Hawaiian purple sweet potatoes? (Hawaii taro and sweet potato chips)

Hawaiian purple sweet potatoes? (Hawaii taro and sweet potato chips) Yup an island root vegetable probably from Japan it is commonly known as Okinawan Sweet Potato, packed with vitamin C and sweetness. It has purple skin and flesh, cut raw reveals white lines but when cooked turns a brilliant purple. I’ve prepared it roasted, grilled and mashed , always comes out as a winner. Every year since I began growing I’ve increased my production 100%. I sell them to high-end sushi bars.

The last is the hardest unless you travel east or had frequented drive-in movies. What is it? I’d be curious what Hatch, Tired and JG think of this one. No hints for now. What is it?

It is a Mangel similar to a beet in density, texture, water content and sugar. A mangel has light to dark gold skin and white to orange-white flesh. It is milder but sweeter than a golden beet. A very nitch market but I have two clients that will buy 10-20 pounds every week and they are not cheap at $2.00 per pound. I’ve never seen them in any market but the French folks go nuts over them. Does it have the same iron content red beets have?

In France they often serve turnips with duck to absorb the fat. You are close Looks like a Rootabaga (sp) but longer than normal?
